We have been buying Juan David's coffees for the past several years and he never fails to disappoint. His background in food science and engineering shines through with every lot we carry. Over the years he has perfected his signature mossto for all of his osmotic dehydration coffees. The process involves placing cherries in a supersaturated solution to draw out the moisture through the power of chemistry. He has experimented with upwards of 30 different co-fermentations over the years and we are proud to be able to offer these lots. The green samples almost always smell exactly like what you would expect them to. His dedication and mastery of his craft is evident in the cup.
